- 2 lbs small button mushrooms, cleaned
- 1 cup white vinegar
- 1 cup water
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp black peppercorns
- 1 tsp dried oregano
- 1 tsp red pepper flakes (optional)
- Combine vinegar, water, olive oil, garlic, salt, peppercorns, oregano, and red pepper flakes in a pot. Bring to a boil.
- Add mushrooms and simmer for 10 minutes.
- Remove from heat and let cool slightly.
- Pack mushrooms into sterilized jars, leaving 1/2 inch headspace.

- Let jars cool and store in a cool, dark place for up to 1 year.
