A tangy and sweet cucumber relish perfect for topping hot dogs, burgers, or sandwiches.

Ingredients

  • 4 cups finely chopped cucumbers
  • 1 cup finely chopped onion
  • 1 cup finely chopped bell pepper
  • 1 tbsp salt
  • 1 cup white vinegar
  • 1 cup sugar
  • 1 tsp mustard seeds
  • 1 tsp celery seeds

Instructions

  1. Combine cucumbers, onion, and bell pepper in a bowl.
  2. Sprinkle with salt, mix well, and let sit for 2 hours.
  3. Drain and rinse the vegetables.
  4. In a saucepan, combine vinegar, sugar, mustard seeds, and celery seeds.
  5. Bring to a boil, then add the drained vegetables.
  6. Simmer for 10 minutes.
  7. Pack the relish into sterilized jars and seal.

Notes

  • Store in the refrigerator for up to 2 weeks.
