2 lbs small cucumbers (gherkins)
4 cups white vinegar
2 cups granulated sugar
1/4 cup pickling salt
2 tbsp mustard seeds
1 tbsp celery seeds
1 tsp turmeric
1 tsp whole cloves
1 tsp whole allspice
Instructions
Wash cucumbers and trim ends.
In a large pot, combine vinegar, sugar, salt, mustard seeds, celery seeds, turmeric, cloves, and allspice. Bring to a boil.
Add cucumbers and simmer for 5 minutes.
Remove from heat and let cool slightly.
Pack cucumbers into sterilized jars and pour hot brine over them.
Seal jars and refrigerate for at least 24 hours before serving.
Notes
Use small cucumbers for best texture.
Store in the refrigerator for up to 3 months.
Adjust sugar to taste for sweeter or tangier pickles.
