  • 4 cups water
  • 3 1/2 cups sugar
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) powdered pectin

Instructions

  1. Rinse the spruce tips and remove any brown parts.
  2. Bring water to a boil, then add spruce tips and simmer for 10 minutes.
  3. Strain the liquid into a large pot, discarding the tips.
  4. Add lemon juice and pectin, then bring to a rolling boil.
  5. Stir in sugar and boil for 1 minute.
  6. Remove from heat and skim off any foam.
  7. Pour into sterilized jars and seal.
