Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in bell pepper, zucchini, and corn. Cook for 5 minutes.
  4. Add black beans, diced tomatoes, and vegetable broth.
  5. Season with cumin, chili powder, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Garnish with fresh cilantro before serving.
