  • 2 lbs ripe tomatoes, halved
  • 1 medium onion, chopped
  • 4 cloves garlic, peeled
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 cup fresh basil leaves
  • 2 cups vegetable broth
  • 1/4 cup heavy cream (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt, black pepper, and red pepper flakes.
  3. Roast for 30-35 minutes until the tomatoes are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender. Add fresh basil and vegetable broth, then blend until smooth.
  5. Pour the mixture into a pot and heat on low for 5 minutes. Stir in heavy cream if desired.
  6. Serve hot, garnished with extra basil leaves.
