- 2 cups fresh blueberries
- 1 cup white vinegar
- 1 cup water
- 1/2 cup sugar
- 1 teaspoon salt
- 1 cinnamon stick
- 2 whole cloves
- Rinse blueberries and set aside.
- Combine vinegar, water, sugar, and salt in a saucepan.
- Bring mixture to a boil, then reduce heat and simmer for 5 minutes.
- Add cinnamon stick and cloves to the liquid.
- Pack blueberries into a clean jar.
- Pour the hot liquid over the blueberries, covering them completely.
- Seal the jar and let it cool to room temperature.
- Refrigerate for at least 24 hours before serving.
Notes
- Use ripe but firm blueberries for best texture.
- The pickled blueberries will keep in the fridge for up to 2 weeks.
