  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine persimmons, sugar, and lemon juice in a large pot.
  2. Cook over medium heat, stirring frequently, until the sugar dissolves.
  3. Add cinnamon and vanilla extract.
  4. Simmer for 30-40 minutes, stirring occasionally, until thickened.
  5. Remove from heat and let cool slightly.
  6. Pour into sterilized jars and seal tightly.
