  • 1 pound boneless, skinless chicken breast, cut into nugget-sized pieces
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (or panko for extra crunch)
  • 1/4 cup grated Parmesan cheese (optional)
  • Cooking spray

Instructions

  1. In a bowl, mix Greek yogurt, lemon juice, garlic powder, oregano, salt, and pepper.
  2. Add chicken pieces to the marinade, coating evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
  3. Preheat air fryer to 375°F (190°C).
  4. In a separate bowl, combine breadcrumbs and Parmesan cheese (if using).
  5. Dredge each marinated chicken piece in the breadcrumb mixture, pressing lightly to adhere.
  6. Place coated nuggets in the air fryer basket in a single layer, leaving space between them. Lightly spray with cooking spray.
  7. Air fry for 10-12 minutes, flipping halfway, until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  8. Serve immediately with your favorite dipping sauce.
