Ingredients

Scale
  • 1 kg fresh apricots, pitted and chopped
  • 750 g granulated sugar
  • 1 lemon, juiced
  • 1/2 cup water

Instructions

  1. Wash and pit the apricots, then chop them into small pieces.
  2. Combine apricots, sugar, lemon juice, and water in a large pot.
  3. Cook over medium heat, stirring occasionally until the sugar dissolves.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring frequently.
  5. Test for doneness by placing a small amount on a cold plate—if it thickens, it’s ready.
  6. Remove from heat and let cool slightly before transferring to sterilized jars.

Notes

  • Use ripe apricots for the best flavor.
  • Adjust sugar based on the sweetness of the apricots.
  • Store in airtight jars for up to 6 months.
