Dilly beans are pickled green beans flavored with dill and garlic. They make a crunchy, tangy snack or side dish.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 cloves garlic, peeled
  • 2 sprigs fresh dill
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon salt
  • 1 teaspoon sugar

Instructions

  1. Wash and trim the green beans to fit your jar.
  2. Pack the beans, garlic, dill, mustard seeds, and peppercorns into a clean quart-sized jar.
  3. In a saucepan, bring vinegar, water, salt, and sugar to a boil.
  4. Pour the hot liquid over the beans, leaving ½ inch of headspace.
  5. Seal the jar and let it cool to room temperature.
  6. Refrigerate for at least 3 days before eating.

Notes

  • Use fresh, firm green beans for best results.
  • Adjust garlic and dill to taste.
  • Store in the refrigerator for up to 2 months.
