A hearty and flavorful soup made with black beans, chipotle peppers, and spices.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 chipotle pepper in adobo sauce, chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 4 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Soak black beans overnight or use quick soak method.
  2. Heat olive oil in a pot over medium heat.
  3. Sauté onion and garlic until soft.
  4. Add chipotle pepper, cumin, and smoked paprika.
  5. Stir in drained black beans and broth.
  6. Bring to a boil, then simmer for 1 hour.
  7. Blend half the soup for creaminess.
  8. Season with salt and garnish with cilantro.
