  • 2 lbs cooked chicken, shredded
  • 4 cups cooked white beans
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cans (4 oz) diced green chiles
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, sauté onion and garlic until softened.
  2. Add shredded chicken, beans, green chiles, and spices.
  3. Pour in chicken broth and bring to a simmer.
  4. Cook for 20 minutes, stirring occasionally.
  5. Stir in lime juice and cilantro.
  6. Ladle hot chili into sterilized jars, leaving 1-inch headspace.
  7. Process jars in a pressure canner at 10 psi for 75 minutes (pints) or 90 minutes (quarts).
  8. Remove jars and let cool completely before storing.
