A hearty Nordic salmon soup made by canning fresh ingredients for long-term storage.

Ingredients

  • 500g fresh salmon, skin removed and cubed
  • 2 carrots, sliced
  • 1 leek, chopped
  • 2 potatoes, diced
  • 1L fish or vegetable stock
  • 200ml heavy cream
  • 1 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh dill, chopped

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add leeks and carrots, sauté for 5 minutes.
  3. Pour in stock and bring to a boil.
  4. Add potatoes and simmer for 10 minutes.
  5. Place salmon cubes into the pot and cook for 5 minutes.
  6. Stir in cream, salt, and pepper.
  7. Simmer for 3 more minutes.
  8. Remove from heat and mix in fresh dill.
  9. Ladle soup into sterilized canning jars, leaving 1-inch headspace.
  10. Process jars in a pressure canner for 90 minutes at 10 psi.

  • Use only fresh, high-quality salmon.
  • Adjust seasoning to taste before canning.
  • Check jar seals after cooling.
  • Store in a cool, dark place for up to 1 year.
