- 6 large yellow onions, thinly sliced
- 4 tbsp unsalted butter
- 1 tsp salt
- 1 tbsp sugar
- 2 cloves garlic, minced
- 8 cups beef broth
- 1/2 cup dry white wine
- 2 tbsp all-purpose flour
- 1 tsp black pepper
- 1 bay leaf
- 1/2 tsp dried thyme
- Melt butter in a large pot over medium heat.
- Add onions, salt, and sugar. Cook until caramelized, about 45 minutes.
- Stir in garlic and cook for 1 minute.
- Sprinkle flour over onions and stir well.
- Add beef broth, wine, black pepper, bay leaf, and thyme.
- Simmer for 30 minutes, stirring occasionally.
- Remove bay leaf.
- Ladle hot soup into sterilized canning jars, leaving 1-inch headspace.
- Process jars in a pressure canner for 75 minutes at 10 psi.
