- 2 Buddha’s Hand fruits
- 4 cups sugar
- 4 cups water
- 1 lemon (juiced)
- Wash and thinly slice the Buddha’s Hand fruits, removing seeds.
- Combine the sliced fruit with water in a pot and bring to a boil.
- Reduce heat and simmer for 30 minutes until the fruit is soft.
- Add sugar and lemon juice, stirring until dissolved.
- Bring to a boil again and cook until the mixture thickens (about 20 minutes).
- Pour into sterilized jars and seal.
Notes
- Store in a cool, dark place for up to 6 months.
- Use a candy thermometer to check for the setting point (220°F).
