A sweet and tangy homemade jam combining blueberries and rhubarb.

Ingredients

  • 4 cups fresh blueberries
  • 2 cups chopped rhubarb
  • 3 cups granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Wash blueberries and rhubarb thoroughly.
  2. Combine blueberries, rhubarb, sugar, lemon juice, and zest in a large pot.
  3. Cook over medium heat, stirring occasionally, until sugar dissolves.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until thickened.
  5. Remove from heat and let cool slightly.
  6. Pour into sterilized jars and seal.

Notes

  • Store in refrigerator for up to 3 weeks.
  • For longer storage, process jars in a water bath.
  • Adjust sugar to taste if rhubarb is very tart.
