  • 300g red currants, stems removed
  • 400g granulated sugar
  • 1 tbsp lemon juice

Instructions

  1. In a large pot, combine apricots, red currants, sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until sugar dissolves.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes until thickened.
  4. Skim off any foam and remove from heat.
  5. Pour into sterilized jars and seal while hot.
