A smooth and creamy spread made from fresh apricots, perfect for toast, pastries, or as a dip.

Ingredients

  • 500g fresh apricots, pitted
  • 1/4 cup water
  • 2 tbsp honey or maple syrup (optional)
  • 1 tsp lemon juice

Instructions

  1. Wash and pit the apricots.
  2. Place apricots and water in a saucepan and cook over medium heat until soft (10-12 minutes).
  3. Blend the cooked apricots into a smooth puree.
  4. Return the puree to the saucepan and simmer on low heat until thickened (15-20 minutes).
  5. Stir in honey or maple syrup (if using) and lemon juice.
  6. Cool and store in an airtight jar.
