A quick and easy recipe for garlic butter shrimp stuffed avocados, made in an air fryer for a crispy finish.

  • 2 large avocados, halved and pitted
  • 1/2 pound shrimp, peeled and deveined
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix shrimp with melted butter, garlic, paprika, salt, and pepper.
  3. Scoop out some avocado flesh to create a larger cavity for the shrimp.
  4. Fill each avocado half with the shrimp mixture.
  5. Place stuffed avocados in the air fryer basket and cook for 8-10 minutes until shrimp are pink and cooked through.
  6. Sprinkle with fresh parsley and lemon juice before serving.
