A quick and healthy meal with crispy tofu coated in teriyaki sauce, served over rice with fresh vegetables.

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tbsp cornstarch
  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame oil
  • 1 cup cooked rice
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced green onions
  • 1 tbsp sesame seeds

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Toss tofu cubes in cornstarch until evenly coated.
  3. Air fry tofu for 12-15 minutes, shaking halfway, until crispy.
  4. In a bowl, mix crispy tofu with teriyaki sauce.
  5. Assemble rice bowls with rice, tofu, carrots, cucumber, and green onions.
  6. Sprinkle with sesame seeds before serving.

Notes

  • Press tofu for at least 15 minutes for crispier results.
  • Use low-sodium teriyaki sauce if preferred.
  • Add sriracha or chili flakes for extra heat.
