Ingredients

  • 4 medium potatoes
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsp sour cream (optional)
  • 1 tbsp chopped fresh chives (optional)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Scrub the potatoes clean and pat them dry.
  3. Pierce the potatoes with a fork and rub them with olive oil.
  4. Air fry the potatoes for 30-35 minutes until tender.
  5. Let the potatoes cool slightly, then cut them in half and scoop out the flesh, leaving a thin layer.
  6. Brush the potato skins with olive oil and air fry for 5 minutes until crispy.
  7. While the skins cook, sauté the onions in a pan with olive oil until caramelized.
  8. Fill the crispy skins with caramelized onions and shredded cheese.
  9. Air fry for another 3-4 minutes until the cheese melts.
  10. Garnish with sour cream and chives if desired.

Notes

  • Use russet potatoes for the crispiest skins.
  • Save the scooped-out potato flesh for mashed potatoes or another recipe.
  • Adjust cooking times based on your air fryer model.
