  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1/4 cup marinara sauce
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 egg, beaten
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Flatten the chicken breasts using a meat mallet or rolling pin.
  3. Spread marinara sauce over each chicken breast.
  4. Add mozzarella cheese and pepperoni slices on top.
  5. Roll up the chicken breasts tightly and secure with toothpicks.
  6. In a bowl, mix breadcrumbs, Parmesan cheese, and Italian seasoning.
  7. Dip each chicken roll-up in beaten egg, then coat with the breadcrumb mixture.
  8. Lightly brush the air fryer basket with olive oil.
  9. Place the chicken roll-ups in the air fryer basket.
  10. Cook for 15-18 minutes, turning halfway, until golden and crispy.
  11. Remove toothpicks before serving.
