Ingredients

  • 2 medium zucchinis, cut into fries
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs (or panko for extra crunch)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • Cooking spray (optional)

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Cut the zucchinis into fry-sized sticks.
  3. In a bowl, mix parmesan, breadcrumbs, garlic powder, salt, and pepper.
  4. Dip each zucchini stick in the beaten egg, then coat with the breadcrumb mixture.
  5. Place zucchini fries in the air fryer basket in a single layer. Lightly spray with oil if desired.
  6. Air fry for 8-10 minutes, flipping halfway, until golden and crispy.
