Crispy chicken fajita quesadillas made in an air fryer for a quick and delicious meal.

Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt to taste
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat air fryer to 380°F (193°C).
  2. Slice chicken into thin strips and toss with bell pepper, onion, olive oil, chili powder, cumin, garlic powder, and salt.
  3. Air fry the chicken and veggie mix for 10 minutes, stirring halfway.
  4. Lay out tortillas and spread chicken mix on one half of each. Top with cheese.
  5. Fold tortillas in half and air fry for 5 minutes, flipping halfway, until crispy.
  6. Slice and serve warm.

Notes

  • Use rotisserie chicken for a faster version.
  • Add jalapeños for extra heat.
  • Serve with sour cream or guacamole.
