- 2 boneless, skinless chicken breasts (about 1 lb)
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt to taste
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Preheat air fryer to 380°F (193°C).
- Slice chicken into thin strips and toss with bell pepper, onion, olive oil, chili powder, cumin, garlic powder, and salt.
- Air fry the chicken and veggie mix for 10 minutes, stirring halfway.
- Lay out tortillas and spread chicken mix on one half of each. Top with cheese.
- Fold tortillas in half and air fry for 5 minutes, flipping halfway, until crispy.
- Slice and serve warm.
Notes
- Use rotisserie chicken for a faster version.
- Add jalapeños for extra heat.
