A quick and easy recipe for creamy chicken pot pie hand pies made in an air fryer. Perfect for a snack or light meal.

  • 1 cup cooked chicken, shredded
  • 1/2 cup frozen mixed vegetables
  • 1/4 cup cream of chicken soup
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, mix the shredded chicken, mixed vegetables, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
  3. Roll out the puff pastry and cut it into 4 equal squares.
  4. Spoon the chicken mixture onto the center of each square.
  5. Fold the pastry over the filling to form a triangle and press the edges with a fork to seal.
  6. Brush the tops with beaten egg.
  7. Place the hand pies in the air fryer basket, leaving space between them.
  8. Air fry for 10-12 minutes or until golden brown.
  9. Let cool for a few minutes before serving.

Notes

  • You can use store-bought rotisserie chicken for convenience.
  • If the edges aren’t sealing well, dampen them with a little water before pressing.
  • For extra crispiness, lightly spray the hand pies with cooking oil before air frying.
