  • 4 medium russet potatoes
  • 1 tbsp olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tbsp chopped green onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 slices cooked bacon, crumbled

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Scrub potatoes, pat dry, and rub with olive oil.
  3. Air fry potatoes for 30 minutes, flipping halfway.
  4. Let potatoes cool slightly, then slice in half lengthwise.
  5. Scoop out flesh, leaving a 1/4-inch shell.
  6. Mix potato flesh with cheese, sour cream, green onions, salt, and pepper.
  7. Spoon mixture back into potato shells.
  8. Air fry for 5 minutes until cheese melts.
  9. Top with crumbled bacon.
